Easy Blueberry Compote

This blueberry compote is so simple to make with just three ingredients, but it will elevate any dish you add it to!

For the ingredients, you’ll need:

  • Blueberries: I recommend using organic blueberries to avoid pesticides (lowkey tastes better too) and to ensure you're getting the best quality fruit. You can use either fresh or frozen blueberries.

  • Lemon Juice: The acidity helps give the compote a vibrant, balanced flavor and helps in thickening it up.

  • Honey: Any liquid sweetener works, or you can skip it altogether! Blueberries are sweet enough on their own.

Optional: A bit of lemon zest if you’re feeling fancy and want to add an extra burst of flavor!

Directions:

  1. In a small saucepan, combine 1/2 cup blueberries, 1 tsp lemon juice, and 1 tsp honey.

  2. Place the saucepan over medium heat and stir occasionally.

  3. Let the mixture cook for about 5-7 minutes, or until the blueberries have softened and started to release their juices.

  4. As the blueberries break down, use the back of a spoon to mash them to your desired consistency. If you prefer a chunkier compote, mash less; for a smoother texture, mash more.

  5. Once it has thickened to your liking, remove from heat.

  6. Let the compote cool for a few minutes before serving. Enjoy on pancakes, yogurt, or your favorite dish!

The longer you cook the compote for, the thicker it will get.

Add on top of your favorite pancakes, waffles, yogurt, toast, anything you like!

* Try heating up a Mindfully Mina’s peanut butter lovers cookie (10 seconds in the microwave) and putting the compote on top for a warm, gooey, peanut butter and jelly vibe!
